If you want to show AMP only for particular pages then you can use this option.
Step 1: Go to WordPress admin area -> AMP option panel -> Settings -> Tools.
Individual AMP Page (Bulk Edit): In this section, we have two options “Show by default” and “Hide by default“. By default, this option is shown.
Step 2 : You need to select the Hide by default option in Individual AMP page. it will hide all pages. In which pages you want to show AMP.
Step 3: Once you select hide by default option in your all pages in right-hand side one option will be displayedshow AMP for Current page. by default, hide option is selected. on which pages you want show AMP select the show option.

Step 4: On which page you want to Show AMP you need to select that show option.

I activate AMP but can not see option hide by defoult in Settings -tools as you describe in one in your article . i have only 2 optiont there :
Select Categories to Hide AMP
Select Tags to Hide AMP

I had the same issue and did as you suggested but after enabling Posts and Pages, although the option did show up, it does not do anything.
Selecting categories does seem to work, but if a site has many categories it gets tricky.
